Black Bean Breakfast Bowl

Today I want to share with you an easy, healthy and filling
breakfast!  I love black beans and when I  saw this recipe on allrecipes.com, I knew I had to try it out.  It was easy to make and take to work and warm
up for my breakfast.  Yeah, I’m one of
those people who can’t put real food in their mouth until at least 8:30 am.  I’m also one of those early morning people
who will survive only if I can consume a cup or two of coffee when first waking
up.  In any case, this meal is
inexpensive, gives a good protein boost, is easily portable and is perfect for
any time of the day….not just breakfast!

 

 
Ingredients
  • 4 eggs eggs, beaten
  • cooking spray
  • 1-15 ounce black beans, drained and rinsed
  • 1 teaspoon water
  • 1/2 teaspoon chipotle powder, or to taste
  • 1 avacado, pealed and diced
  • 1/4 cup salsa
 
Instructions
Heat a small pan over medium heat, spray with cooking spray.  Cook and stir eggs until eggs are set.  Place black beans and water in a microwave-safe bowl and stir in chipotle chili powder.  Heat in the microwave on high until warm, about 1 minute.  Divide warmed black beans between two bowls.  Top each bowl with scrambled eggs, avocado, and salsa, season with salt and pepper to taste.
